Preparation Time: 10 Minutes

Cooking Time: N/A

  • Large clean glass jar, sterilised in hot water and dried
  • Boiled water
  • 3-4 tbsp raisins
  • 3 tbsp sugar
  • Honey
  • Plain flour

  1. Add the raisins and honey to your jar.
  2. Fill the jar ¾ of the way up and place the lid on lightly– there must be room for some air to escape.
  3. Keep the jar at room temperature and stir every 3-4 days.
  4. When bubbles appear at the top and you can smell a wine-like fermentation, you have created yeast! The raisins should be floating at the top of the liquid.
  5. When it’s stored in the fridge, feed it weekly with 1 cup of flour and 1 cup of water.
  6. To ensure the ratios stay the same, discard one cup of the starter.
  7. You can freeze your yeast and it will keep for up to three months.
