Spanish Omelette



  1.  Mix the eggs in a bowl, add salt and pepper
  2. Put 1oz butter into a large non-stick pan
  3. Add strips of red pepper and cook for 2-3 minutes
  4. Cut the potatoes into small dice and add to the peppers, then add the onions
  5. Add parsley to egg mix
  6. Put 1oz of butter into vegetables
  7. Add eggs and stir with a fork until the egg starts to set
  8. Put into the oven 180 c for 5 minutes to set
  9. Turn over onto a service plate
  10. Rub with a little butter and serve

  • 12 eggs

  • 8oz cooked potatoes

  • 2oz cooked sliced onions

  • 2oz red pepper, cut into strips

  • 1tbsp chopped parsley

  • 3oz butter
